Weekly Goals

I'm a list kinda girl. There is great satisfaction in completing the list in my back pocket. In fact I have been known to add a line to my list after I finished a project, just so I can scratch it off. So in effort to get a little more organized and a little more accomplished, I have decided to set 5-7 clear goals for my week.

Some of my goals will be small and simple, and some of them will be big projects I have been working on for a while. Either way I know that writing them down will give me a guide and a tiny bit of accountability. So here goes one more little effort to make myself more productive and efficient. Wanna join me?

1. get fall clothes and decor from attic
2. make it to the gym 5 days
3. get pics printed for hall frames
4. get a cd of our last photo session
5. make eisly's bday party invitations
6. buy canvases for project and frame for big picture
7. email missionaries about christmas catalog

What's For Dinner?

So I fell behind again :) Well, here's this week's menu anyway...

Monday
Stuffed Bell Peppers (recipe below)

Tuesday
20 Clove Garlic Chicken(crockpot meal)
Green Beans
Mashed Potatos

Wednesday
Frito Pie
Carrot Sticks & Broccoli w/Ranch

Thursday
Pancakes
Sausage Patties
Scrambled Eggs

Friday
Salmon Patties
Baked Friess
Asparagus

Stuffed Bell Peppers
8 bell peppers, capped and seeded (i like to use the red ones)
1 lb. ground beef
1 lb. ground pork sausage
1 large onion, chopped
1 1/2 cups cooked rice
2 eggs, beaten
1/2 cup milk
1/2 cup ketchup
dash of tobasco sauce
1 large can tomato sauce
salt & pepper


Brown the ground meat with the onions, and salt and pepper to taste.
In a large mixing bowl, combine all the ingredients except the bell peppers and tomato sauce. Oil a heavy skillet or dutch oven, and line the peppers up standing  close together. Gently fill the peppers with the meat & rice mixture. Pour tomato sauce and one can of water over the top. Bake on 350 degrees for 2 hours or until bell peppers are completely tender.
