This is one delicious way to cook chicken! My brother-in-law, Marc, used to make these for us, so I think of him every time I make them ;-)

3 chicken breasts
1 large onion, finely chopped
2 Tablespoons butter
4 oz. sour cream
8 oz. cream cheese, softened
1/2 cup salsa
14 oz. shredded cheese
corn tortillas

Preheat oven to 375 degrees, and spray the bottom of a 9x13 baking dish.
Boil and shred chicken breasts.
Saute onions in butter until they are clear.
Add softened cream cheese and sour cream.
Stir occasionally until the mixture is completely melted.
Add salsa, chicken, and half the cheese. Mix well.
Roll the mixture into tortillas and place seam side down into the baking dish.
Spread left over mixture on top of rolled enchiladas and sprinkle with remaining cheese.
Bake for 30 minutes.
